With a Deeply Fermented Heart
Paragraph 2.3.1
With a Deeply Fermented Heart
So, let's think about this in relation to Buddhism. Buddhism is called shimhak, or the study of the heart. You may have heard the phrase ‘Everything comes from the mind' (일체유심조一切唯心造)’ quite often in Mahayana Buddhism, meaning that everything is created solely by the heart. As such, Buddhism is about the heart. It's the study of how to grind and polish the heart until it is peerless in its quality. Whether it's meditation or anything else, everything is done to the end of improving and putting this heart in order. To grind, polish, and tame this heart so that you are its master, to use that heart to live your life in the most beautiful way in line with dhamma—that's what being studied. Let's think about that in comparison to what Lee Nal Chi said.

Paragraph 2.3.2

‘Sori/Sound isn't good because the chung is good.’

Insert 'heart' here in place of 'sori.' Then it comes to mean 'You cannot say that because the heart one is born with is kind, that it is good.' Why? Because being born as a human means that one already belongs to the realm of human karma. No matter the quality of the heart or the life lived, there is an obvious limitation to being born in the sahā world. The realm of humans. It's a heap of greed, hate, and delusion, the three poisons.

Paragraph 2.3.3
If you have young children or grandchildren, you might look at how cute and innocent they are and wonder how could there be any greed, any rage inside them. But if you focus your affection-tinged eyes and look carefully, you'll see that there are no beings quite as selfish as small children. They're completely self-centered. If the slightest thing bothers them, they burst into tears and make adults tend to them, thus imposing their will. They're quite selfish and utterly uncompromising. Young or old, humans are piles of greed, hate, and delusion. That's why we received these human bodies and were born into this sahā world. I mean to say, just because one was born with a good personality, doesn't mean all is well. Just like 'a good chung doesn't make things good,' one's natural heart, one's raw heart, can't be used to study the heart.

Paragraph 2.3.4
Let's figure out why, using some Buddhist terminology. The domains of taste and sound, these refer to the tongue and ear organs in the six internal sense-bases of Buddhism, which include eyes, ears, nose, tongue, body, and mind. The domain of the heart, this refers to the mind organ among the six internal sense-bases. Just as the tongue is to the domain of taste, and the ear is to the domain of sound, the mind corresponds to the domain of dhamma. The same dhamma, when we say vision, sound, scent, taste, touch, and dhamma. Mind corresponds to dhamma. The internal organ of mind corresponds to the external domain of dhamma. This means the outside of the mind is surrounded by dhamma.

Paragraph 2.3.5
Mind refers to our hearts, more specifically it refers to our heart as it relates to dhamma. That is to say, the ability to distinguish right from wrong, beneficial from harmful, helpful from unhelpful. Dhamma is divided into wholesome and unwholesome dhamma (kusala dhamma and akusala dhamma????). Wholesome dhamma is helpful and useful to us on the road to nirvana, in essence, in the practice of do. On the other hand, dhamma that is unhelpful or a hindrance in this regard, dhamma that's not good, is unwholesome dhamma. Not, 'evil dhamma,' mind you. Buddhism doesn't describe these as good or evil—it refers to them as good and not-good. This is yet another characteristic of Buddhism. And so we make this distinction between wholesome dhamma and unwholesome dhamma, and the ability to distinguish these wholesome and unwholesome factors, that is the 'mind.'

Paragraph 2.3.6
If we observe objects with the thoughts we are born with, with the mind we are born with, then we perceive them in their unremarkable names and forms. That's what we call nāmarūpa. Typically, we interpret this as the combination of the mental and physical worlds. According to dependent origination (Pratītyasamutpāda), we would say 'if there is consciousness (識), there is nāmarūpa.' 'if there is nāmarūpa, there is consciousness.', and 'if we are to eliminate nāmarūpa, we must eliminate consciousness (識).'

Paragraph 2.3.7
If you observe objects with your inherent mind—that is to say, observe them with your crude heart, your raw, unfermented consciousness—then objects are simply nāmarūpa. That nāmarūpa is thus meaningless, a delusion as empty as a mirage. Yet, if we are seduced by nāmarūpa but once, it may take not just one life, but the next life, and ten more lives after that to escape its allure. Unfortunately, the reality is that you are all entities living under the seduction of nāmarūpa. If we were not seduced by nāmarūpa, we wouldn't be spending this life in human bodies, flailing about in this world of suffering. But because we have been seduced by nāmarūpa, we are inflicted with this suffering.

Paragraph 2.3.8
The Buddha said that the reason we live seduced by nāmarūpa is because of our ignorance. We call this fundamental ignorance The Buddha also said 'If you escape ignorance and observe the world with wisdom, the world itself is orderly dhamma—the world of dhamma.' If you observe the world through those crude things, the raw heart, mind, and consciousness, you cannot see dhamma for what it is—you commit the error of seeing it as ordinary nāmarūpa. It means that we should rid ourselves of our inherent hearts, minds, and consciousness, and become mature so that we can see dhamma as dhamma.

Paragraph 2.3.9
When I say there's wholesome and unwholesome dhamma, it doesn't mean that wholesome dhamma exists for the sake of wholesomeness or what unwholesome dhamma exists for the sake of unwholesomeness. Dhamma, wholesome and unwholesome, exist to help us on the way to nirvana. However, we don't know how to see that dhamma properly, and are thus living deceived by nāmarūpa and seeing but illusions. And so, we must focus on our hearts, minds, and consciousness, especially our minds, and learn to see dhamma.

Paragraph 2.3.10
There's a common saying when people visit temples: 'that person's heart is well-rested.' Have you heard of it? A well-rested heart. It's like fermented food, like fermented sori, like the third sound after a chemical reaction—but referring to equivalent state of the heart. As our people don't eat raw food and instead eat food after fermenting it, as we don't enjoy voices in their inherent beauty, the beauty of sopranos or tenors, hearts are used after deep fermentation.

In line with those traditions, we don't engage with raw dhamma. When you handle dhamma in its raw state, it just becomes nāmarūpa. We enjoy dhamma after thorough fermentation, with a thoroughly fermented heart. To a well-fermented heart, there is well-fermented dhamma. It's a culture that takes in well-aged dhamma—highly refined, wholesome dhamma.
